Decaffeinated specialty coffee from Mexico from small producers in the Chiapas region.

The coffee has gone through a natural process with water and a wet, washed process mill with aerobic fermentation.

After the tasting we find a spicy coffee, highlighting flavors of light caramel, vanilla and cinnamon. We will appreciate an oily texture and a medium intensity.

About the Chiapas region

The coffee region of Chiapas is located in the southwest region of the country, bordering Tabasco to the north, its capital is Tuxtla Gutiérrez. 5.5 million inhabitants live in the Chiapas region and its surface area is 252,744 km². Chiapas has 88 coffee-growing districts . These districts are home to more than 70,000 families dedicated to coffee growing. In total, there are 180,000 hectares in the region dedicated to coffee growing. coffee cultivation, the most cultivated varietals in the Oaxaca region are Típica, Caturra, Borbón, Catimor 129 and Mundo Novo. Oaxaca occupies 1st place as a coffee region in Mexico
