This coffee was grown by Luz Helena Salazar at the La Leona estate. It was harvested following strict maturity criteria, floated and hand-selected to remove any defects. The cherries were then exposed to 30 hours of fermentation under water before being pulped. The parchment was then gently washed and dried under temperature-controlled conditions until the ideal humidity level was reached.
We obtain a coffee with a chocolate profile with tasting notes of molasses, apricot, lime and chocolate.

Luz Helena grew up in Armenia (Quindio) and has been growing coffee there for 20 years. Inspired by her husband Jairo Arcila’s work on coffee farms and as a dry mill manager, Luz Helena has focused in recent years on elevating her coffee to specialty levels and has set out to renew and perfect her farming practices. Through this refinement, she has developed an obsession with quality and a fascination with processing. Her sons Carlos and Filipe inherited this passion, and now both run Cofinet, a company that sources, produces and exports the finest coffees, with traceability and sustainability as its main objectives.
